It's always at this time of the year when I start noticing the days getting slightly longer. Did you notice I said slightly? Getting home after work in the dark is always such a bummer, but tonight when I arrived home around 5:30, there was still some daylight. Wow, such a good feeling. No snowshoeing tonight, but rather a brisk walk on the country roads. A bit breezy tonight with a subzero temperature....whoo hoo!
And Bike man you ask? He's surviving the winter working out on his bicycle trainer. What about you.....how are you keeping active this winter?

Enjoyed the Sunshine
Another ten hours of sleep and I almost feel bad to normal, almost. Seven degrees this afternoon, wow, it's a heatwave! Decided to go out snowshoeing on the lake. Found these animal tracks in the snow. Not really sure what it is, but it diffidently dragged it's feet or body. With over a foot of snow out on the lake, it was a good workout on the snowshoes.
The sunshine felt great. A little wind out there, but mostly dealt with a sunburned face when I finished my one-hour walk. Oops, need to remember to apply sunscreen next time. One never thinks about that in single digit temperature!
Our big Super Bowl meal? Bike man and I made fried spring rolls, with yummy rice noodles, grated carrots, green onions, sprouts, fresh ginger, jalapeno jelly and baked tofu marinated in teriyaki. The filling is added to a tapioca sheet that was pre-soaked in warm water. I think we made about seven rolls.
I also made a small bowl of Asian peanut sauce to compliment the spring rolls. Spring rolls are a very light meal....kind of guilt-free ya know? As for the Super Bowl, I'm only watching for the commercials. Yup, could care less about football. Just saying.......
